I had my awesome vegan friend over for dinner tonight and had fun coming up with a delicious healthy dish for her that would have plenty of protein, and allow me to use figs - something I don’t cook with enough. I walked around the store imagining what flavors would taste good together and came up with this: baked Quinoa-Apple stuffed Portobellos with a balsamic-fig purée - and a little side salad with baby kale and sage.
